Sitting proudly on the Cromarty Firth in the Scottish Highlands this distillery was built in 1839. It was founded by Sir Alexander Matheson of Jardine Matheson fame as a trading firm specializing in tea, silver and opium. Run and owned by the Mackenzies, their proprietory bottlings feature a ‘Royal’ or 12 pointer stag’s head. Their unique still house -the heart of their alchemy-houses four flat topped wash stills and four idiosyncratic spirit stills – each with a cold water jacket on the neck. Renowned for its rich, deep spirit, it positively thrives to decades of aging oaken barrels and this cask selection is a classic.
The taste of this superb 1967 Dalmore Instantly reminded me of the finest handmade Belgian chocolates. Praline nuttiness, citrus fondant and even dark chocolate coffee cremes effervesce in the mouth with every sip.
