California- Mix of sweet and tart apples carefully crushed and fermented before entering a Holstein still then distilled before clarifying the cider, preserving the fresh apple flavor. Rested for 2 years in used French Oak before finishing in new charred American Bourbon Barrels


This is made by a husband and wife team from Northern California who used Clear Creek's distillery to make a family recipe for applejack. They wanted to create an American applejack using the famous Arkansas Black variety of apple.Their first batch was fermented and distilled at Clear Creek distillery, but they have since found another source for their apple spirit. In fact, they source a high quality apple spirit fresh from Norman Pot Stills before resting it for 2 years in used French Oak barrels. The brandy is then finish in ex-bourbon barrels and bottled at 3 years of age. The result is a robust and assertive spirit that definitely falls into the applejack category and not the Calvados brandy style, despite the source. The apple flavor is front and center, but there's plenty gusto behind it. For cocktail mixing, this is a must-have.
